Brunch on New Year’s Eve — Sunday, December 31

Often called the “most lavish” brunch in downtown Denver, Ellyngton’s Champagne Brunch will be offered from 10 a.m. to 2 p.m. on Sunday, December 31. The buffet tables will be loaded with eggs, waffles, fresh seafood selections, sushi and salad stations, and bakery items. Brunch on New Year’s Day — Monday, January 1

This one’s not served buffet-style, but Del Frisco’s brunch options are to die for. Try their Red Velvet Belgian Waffle or a Crabcake Benedict, along with something bubbly.
